Weekday French Toast

Ingredients

2 slices bread of choice

1 egg

1/3 cup oat milk (or milk of choice)

1 teaspoon vanilla

1 teaspoon honey

Heaping dashes of cinnamon

Pinch of salt

Coconut oil, for frying

Method

1. Using a shallow bowl or sheet pan, whisk together egg, milk, cinnamon, vanilla & honey.

2. Take each piece of bread and soak in wet mixture for 30 seconds in each side. Set aside.

3. Heat coconut oil in a medium sized frying pan and cook for 2-3 minutes on each side ( or until nicely browned).

4. Top bread with sliced bananas, blueberries, a little more honey and cinnamon and enjoy!
